Migas for Food Lovers

  1. Place a non-stick skillet on a burner set at medium-high.
  2. Heat for about 2 minutes.
  3. Toss in the onion, garlic and tomato and saute for a minute or two.
  4. Add in the spinach and stir.
  5. Allow to cook until most of the water is gone - stirring every now and then.
  6. Add the egg whites and toss around until egg whites are cooked.
  7. Remove from heat.
  8. Plate and garnish with the salsa, cheese and tortilla chips.
  9. Enjoy!
