Migas for Food Lovers
- 1 tablespoon onion, chopped (any kind, green, red, spanish, vidalia)
- 2 garlic cloves, chopped
- 1 medium tomatoes, chopped
- 12 cup spinach, chopped
- 4 egg whites
- 2 tablespoons salsa
- 2 tablespoons cheddar cheese, grated (choose your favorite cheese)
- 1 ounce tortilla chips
- Place a non-stick skillet on a burner set at medium-high.
- Heat for about 2 minutes.
- Toss in the onion, garlic and tomato and saute for a minute or two.
- Add in the spinach and stir.
- Allow to cook until most of the water is gone - stirring every now and then.
- Add the egg whites and toss around until egg whites are cooked.
- Remove from heat.
- Plate and garnish with the salsa, cheese and tortilla chips.
- Enjoy!
