sig's Fava Bean Pilaf
- 50 ml vegetable oil
- 1 onion finely chopped
- 2 gloves garlic, finely.chopped or.crushed
- 2 tsp each,cumin and coriander seeds ,dry toaated for a few seconds and crushed with,mortar and pestle
- 10 cardamon pods
- 2 cloves
- 2 inch / 5 cm cinnamon stick
- 1 tsp turmeric
- 225 grams basmati rice , washed in cold water for 20 minutes, drained,
- 200 grams frozen or fresh fava ( broad) beans , remove membrane .
- 400 ml vegetable stock
- 50 grams butter
- 4 zucchini, ,cut into 1 inch slices,
- 1 pinch each salt and pepper
- 6 tsp creme fraiche
- fry garlic and.onion in oil for 6-8 minutes until soft
- add all spices ,cook, stirring for 3 minutes,
- add beans ,rice.and stock, cover,cook over low heat to simmer for 12-15 minutes until rice is,tender,
- stir in the butter.
- meanwhile brush the sliced zucchini from both sides with oil and season,with salt and pepper,add to a hot griddle pan and cook for 3 minutes from each side until slightly charred
- serve the rice with the zucchini and garnish with creme fraiche
- for polpettes
- add a little flour to leftover mixture and blend down for about 30 seconds or so, not to smooth.
- Form polpettes ( little bitesize portions), first roll in flour then whisked egg , then homemade breadcrumbs that are seasoned with a pinch of salt ,pepper, a little touch of chilli and/or garlic powder, Then fry in oil until heated through and golden brown.Or make burger sized for bigger appetite.
