Maple Apple Pie From the Yankee Cookbook

  1. Have pie pan lined with pastry.
  2. Put in sliced tart apples.
  3. Spread over them maple sugar, salt, cinnamon, and flour; dot with butter.
  4. Cover with perforated top crust; brush with cream and bake in a hot oven (450F) for 10 minutes; then reduce heat to moderate (350F) and bake for 40 to 50 minutes longer.
  5. Makes 1 two-crust 9 inch
