Lemon-Dijon Chicken Breasts

  1. Combine breadcrumbs and rind, stirring well.
  2. Combine lemon juice, mustard and lime juice; brush mixture over both sides of chicken.
  3. Dredge chicken in breadcrumb mixture.
  4. Place chicken in a 13 x 9 x 2-inch baking dish coated with cooking spray; sprinkle with any remaining breadcrumb mixture.
  5. Bake, uncovered, at 375u0b0 for 15 minutes.
  6. Turn chicken and bake an additional 15 minutes or until done.
  7. Garnish with lemon slices, if desired.
  8. Yield:
  9. 6 servings (167 calories and 12 percent fat per serving).
