Lemon-Dijon Chicken Breasts
- 1/2 c. fine dry breadcrumbs
- 2 tsp. grated lemon rind
- 2 Tbsp. country-style Dijon mustard
- 3 Tbsp. lemon juice
- 6 (4 oz.) skinned, boned chicken breast halves
- 1 Tbsp. lime juice
- vegetable cooking spray
- lemon slices (optional)
- Combine breadcrumbs and rind, stirring well.
- Combine lemon juice, mustard and lime juice; brush mixture over both sides of chicken.
- Dredge chicken in breadcrumb mixture.
- Place chicken in a 13 x 9 x 2-inch baking dish coated with cooking spray; sprinkle with any remaining breadcrumb mixture.
- Bake, uncovered, at 375u0b0 for 15 minutes.
- Turn chicken and bake an additional 15 minutes or until done.
- Garnish with lemon slices, if desired.
- Yield:
- 6 servings (167 calories and 12 percent fat per serving).
