Tofu Salad
- 1 block Silken tofu
- 3 leaves Lettuce
- 4 tbsp Hijiki dried seaweed (re-hydrated)
- 2 Green onions or scallions
- 2 tbsp Chirimen Jako
- 1 Bonito flakes
- 2 tbsp Ponzu
- 1 and 1/2 tablespoons Ground sesame seeds
- 1 tsp Sugar
- 1 tbsp Umeboshi
- 2 tsp Sesame oil
- Break up the tofu and put it on a plate.
- Finely slice the green onions, and shred the lettuce.
- Rehydrate the hijiki.
- Pour the sesame oil into the frying pan and fry the chirimen jako.
- Add the hijiki and fry it quickly.
- Put the lettuce on the plate with the tofu and lightly mix.
- Top with the hijiki and chirimen jako, then sprinkle on some bonito flakes and green onion.
- Grind the sesame seeds with a mortar and pestle.
- Mix in the ponzu and sugar, then add the chopped umeboshi.
- Add the sesame oil and pour the mixture over the tofu to finish.
