Hash Salad Recipe
- 5 teaspoon Dijon style mustard
- 1/3 c. red wine vinegar
- 1 c. light extra virgin olive oil
- 12 sm. red-skinned new potatoes
- 1/2 teaspoon coarse (kosher) salt
- 2 teaspoon coarsely grnd black pepper
- 3 c. cooked turkey or possibly chicken, shredded into pcs 2 inches by 1/2 to 1 inch
- 12 big cloves of garlic
- 1/2 pound bacon, cut into 1/2 inch pcs
- 1/2 c. finely minced purple onion
- 1/4 c. minced Italian parsley
- 1 bunch arugula, well washed, stems removed
- 2 bunches watercress, well washed, stems removed
- This is a hearty, main course salad, a good way to use leftovers.
