Chicken Salad with Tangy Lime Dressing

  1. Grill or broil the chicken breasts until cooked and cut into bite sized pieces.
  2. If using a whole cooked chicken, take all the flesh off the chicken, discarding the skin and bones, and cut into bite sized pieces.
  3. Combine chicken and all the salad ingredients in a bowl.
  4. Make the dressing by combining all of the ingredients in a jar and shaking it well.
  5. Just before serving add the dressing to the salad and toss together until salad is coated in dressing.
