Banana Bran Muffins
- 1 1/2 cups mashed ripe bananas, about 3 medium bananas
- 1/2 cup milk
- 1/3 cup honey
- 1/3 cup oil
- 1 egg
- 1 cup 100% wheat bran high fibre cereal
- 1/2 tsp. salt
- 1/2 cup sunflower kernels or chopped nuts
- 1 1/2 cups whole wheat flour
- 1 Tbsp. Magic Baking Powder
- 1/2 tsp. baking soda
- GREASE 12 large muffin tins or line with paper baking cups.
- WHISK together bananas, milk, honey, oil and egg.
- Stir in cereal.
- MIX remaining ingredients in large bowl.
- STIR cereal mixture into dry ingredients, stirring until just moistened.
- Spoon into muffin cups, filling each to the top.
- BAKE at 400F (200C) for 15 to 20 minutes or until firm to the touch.
- Cool in pan 5 minutes; remove muffins and cool on rack.
- Store in airtight container.
