Prosciutto & Gorgonzola Chicken
- 2 whole Boneless, Skinless Chicken Breasts
- 1 Tablespoon Shredded Mozzarella Cheese
- 1 Tablespoon Gorgonzola Cheese
- 4 slices Prosciutto
- 1 Tablespoon Extra Virgin Olive Oil
- Salt And Pepper
- Preheat oven to 400 degrees F. Spray an 8x8 baking dish (with canola or olive oil spray (or spread a little olive oil in the bottom).
- Cut chicken breasts almost in half horizontally so that it opens like a book.
- Sprinkle mozzarella and gorgonzola on each chicken breast and fold chicken back over cheeses.
- Wrap each breast with 2 slices of prosciutto.
- Place breasts in prepared dish.
- Drizzle with olive oil and salt and pepper.
- Bake for about 25 minutes or until chicken is cooked through.
