Turkey Chili
- 2 tablespoons olive oil
- 2 lbs ground turkey (about 94% lean)
- 12 garlic cloves, minced
- 1 sweet red pepper, diced
- 1 green bell pepper, diced (or use celery)
- 1 large onion, diced
- 2 tablespoons chili powder (or more)
- salt
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 2 bay leaves
- 14 teaspoon ground cloves
- 2 teaspoons ground cumin
- 2 (14 1/2 ounce) cans diced tomatoes
- 1 (32 ounce) carton chicken stock
- 2 (15 1/2 ounce) cans great northern beans, drained and rinsed
- Heat oil in large stockpot on medium high heat until oil faintly smokes.
- Add ground turkey.
- Cruble and sear until lightly browned.
- Add garlic, peppers, and onions to browned turkey.
- Stir in chili powder, salt, Worcestershire sauce, soy sauce, bay leaves, cloves, and cumin.
- Add tomatoes and stock.
- Bring to simmer; add beans.
- Continue to simmer, uncovered, on low medium-medium heat for 45 minutes, stirring occasionally.
- Discard bay leaves.
