Smoked Trout, Blood Orange and Avocado Salad
- 80g baby spinach leaves
- 3 spring onions, sliced into 5cm lengths
- 2 blood oranges, peeled and segmented Safeway 1 lb For $0.79 thru 02/09
- 2 avocadoes, sliced Whole Foods 5 ea For $5.00 thru 02/09
- 1 bunch asparagus, blanched
- 200g smoked trout fillet, gently flaked
- 50g macadamia nuts, toasted
- 1/3 cup KRAFT French Dressing
- Arrange spinach, spring onion, orange, avocado, asparagus and smoked trout on a serving platter.
- Top with macadamia nuts, drizzle with dressing and serve immediately.
