Light and Crispy Tempura Batter

  1. Prep all the ingredients you want to fry.
  2. Chill in the refrigerator until cooking.
  3. Briefly mix the ingredients together roughly (work briskly... there should be some lumps!)
  4. Heat oil for frying.
  5. It's hot enough when a drop of batter sinks to the bottom and then immediately rises to the surface.
  6. If the ingredients for frying are slightly wet, pat dry.
  7. Dip in the batter and deep fry.
  8. When they have turned a nice color, they're done.
