Milk Toblerone* Friands

  1. Bring the wine, water, sugar, orange rind and star anise to the boil, simmer for 5 minutes.
  2. Add the pears and return to the boil, then simmer a further 20 minutes until tender.
  3. Remove pears and cover.
  4. Simmer the remaining liquid until reduced by half.
  5. Allow to cool.
  6. Beat the butter and sugar until pale, then add the eggs, one at a time, beating well after each addition.
  7. Fold in the sifted dry ingredients and the chocolate.
  8. Spoon the mixture into 6 x 1/2 cup greased friand pans.
  9. Bake at 180 degrees C for 12-15 minutes or until cooked through.
  10. Turn out and allow to cool.
  11. Serve friands with poached pears, a drizzle of sauce and a dollop of cream.
