Milk Toblerone* Friands
- 2 cups red wine
- 2 cups water
- 3/4 cups caster sugar
- 2 x 5cm pieces orange rind
- 2 star anise
- 6 Beurre Bosc pears, peeled, halved and cored Safeway 1 lb For $1.88 thru 02/09
- 200g TOBLERONE* Milk Chocolate, chopped and melted
- 80g softened butter
- 1/3 cup brown sugar
- 2 eggs
- 1/2 cup plain flour
- 1/2 teaspoon baking powder
- Pure cream, for serving
- Bring the wine, water, sugar, orange rind and star anise to the boil, simmer for 5 minutes.
- Add the pears and return to the boil, then simmer a further 20 minutes until tender.
- Remove pears and cover.
- Simmer the remaining liquid until reduced by half.
- Allow to cool.
- Beat the butter and sugar until pale, then add the eggs, one at a time, beating well after each addition.
- Fold in the sifted dry ingredients and the chocolate.
- Spoon the mixture into 6 x 1/2 cup greased friand pans.
- Bake at 180 degrees C for 12-15 minutes or until cooked through.
- Turn out and allow to cool.
- Serve friands with poached pears, a drizzle of sauce and a dollop of cream.
