Summer Squash & Zucchini Casserole
- 3 cup summer squash (sliced and steamed)
- 3 cup zucchini (sliced and steamed)
- 1 onion chopped
- 2 dash stuffing mix
- 1 stick butter
- 1 cup sour cream
- 1 cup grated carrot
- 1 can cream of chicken soup
- 1 bacon (optional)
- Preheat oven to 350
- Melt butter and stir in stuffing.
- Spread half of mixture in 9x13 pan.
- Mix soup, sour cream, carrots, onion, squash, zucchini and bacon and spread over stuffing.
- Spread remaining stuffing on top.
- Bake for 30 minutes
