Chicken with Hummus and Yogurt Dressing (low fat)
- 3 boneless chicken breasts
- 1 lemon, juice of
- 5-1/2 oz. natural yogurt
- 3-1/2 oz. hummus (chargrilled capsicum flavour is best)
- Make three diagonal slits on each chicken breast.
- Cook chicken at 180C/350F for 45 minutes (or until juice runs clear).
- Mix dressing together, and drizzle over each cooked chicken breast
