chia's rice & orzo
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 cup basmati rice
- 1 cup orzo pasta
- 3 12 cups chicken broth
- salt and pepper
- 2 tablespoons Italian spices
- 14 cup parmesan cheese (optional)
- in saute pan melt butter and olive oil on hi.
- stir in onions, and saute until light brown.
- stir in rice and orzo, coat, and stir until very light brown.
- add broth and seasoning, heat to boiling.
- cover and simmer for 20 minutes.
