Baked Endive Recipe

  1. Heat the oven to 400 degrees.
  2. Trim then cut the endive in half lengthwise; wash and shake dry.
  3. Place the endive halves, cut-side down in a jellyroll pan.
  4. Add in salt and pepper to taste and the oil, distributing it proportionately.
  5. Bake the endive 10 min and turn, then bake it another 6 to 7 min and turn again.
  6. Cook it till its base feels tender when prodded with a fork, about 20 min longer.
  7. Allow it to settle a few min before serving.
  8. It is also good at room temperature.
  9. This recipe yields 6 servings.
