Arugula and Prosciutto Salad
- 100 cups arugula
- - fresh mozzarella cheese, cut into 1/4-inch-thick slices
- 6 cups Kraft Poppyseed Dressing
- 6 cups red onions, thinly sliced
- 3 cups pine nuts, toasted
- 12 cups navel oranges, peeled, sectioned
- - thinly sliced prosciutto, rolled up
- For each serving: Toss 2 cups (500 mL) of the arugula with 4 oz.
- (125 g) of the mozzarella cheese and 2 Tbsp.
- (30 mL) of the dressing.
- Place on serving plate.
- Top with 1/2 oz.
- (15 g) of the onion, 1 Tbsp.
- (15 mL) of the pine nuts, 1/4 cup (50 mL) of the oranges and 2 oz.
- (60 g) of the prosciutto.
