Beef With Oregano Recipe

  1. In a flameproof casserole large sufficient to place beef in 1 layer, heat oil.
  2. Add in bacon and saute/fry till crisp; remove with a slotted spoon and set aside.
  3. Add in beef and cook till proportionately browned.
  4. Add in onions and toss in oil for 1 minute.
  5. Add in 1/2 of oregano and parsley, bay leaf, garlic, wine and water.
  6. Cover and simmer 2 hrs.
  7. Add in bacon and olives and continue cooking 45 min-the stew should be fairly liquid.
  8. Mix together bread crumbs, lemon peel and remaining herbs and add in to stew.
  9. Cook, uncovered, 10 to 15 min more.
  10. Season with salt and pepper.
  11. Throw away bay leaf.
  12. Garnish with oregano sprigs and serve with fresh bread and green salad.
  13. Variation: Thyme can be added to this casserole for a stronger, more aromatic flavor.
  14. Substitute 1 Tbsp.
  15. finely minced thyme for 1/2 of oregano.
  16. Makes 4 servings
