Comforting Cabbage Jambalaya
- 1 cup chopped celery
- 1 green bell pepper
- 12 head cabbage
- 2 cups rice
- 1 medium onion
- 1 lb kielbasa or 1 lb other smoked sausage
- 1 lb chicken
- 1 (4 ounce) can tomato sauce (tomato soup will also work)
- 1 (14 ounce) can chicken broth
- 2 teaspoons of minced garlic (or garlic powder)
- 1 tablespoon Season-All salt
- 2 tablespoons cajun seasoning
- Chop up the celery, onion, bell pepper and cabbage and put in a large pot.
- Add the tomato sauce and the chicken broth.
- Add your seasonings (garlic, Cajun seasoning and Season All).
- Fill the pot with enough water to cover all the ingredients, then stir.
- Bring to a boil, cover and then simmer for 1 hour.
- Add the rice, and an additional cup of water, re-cover, bring to a boil and simmer for 25 minutes.
- Cut the Kielbasa and chicken into bite sized pieces and brown in a frying pan, add the Kielbasa and chicken to the pot when the rice is done cooking, stir.
- Cool off and enjoy!
