Flank Steak with Parsley and Lemon

  1. Preheat broiler.
  2. Sprinkle both sides of steak lightly with salt and pepper.
  3. Broil 5" from heat for 4-5 minutes per side for medium rare.
  4. Transfer to carving board.
  5. Cover, let stand for 5 minutes.
  6. Meanwhile, whisk oil, lemon juice, parsley, garlic, lemon peel, and 1/4 tsp.
  7. each of salt and pepper in small bowl.
  8. Slice steak diagonally against the grain.
  9. Transfer to platter, pour on dressing.
  10. Serve with new mashed potatoes.
