Orange Beef and Rice
- 1 tablespoon oil
- 1 lb top round beef, cut into 1/2-inch cubes
- 1 small onion, diced
- 2 garlic cloves, sliced
- 12 lb sliced mushrooms
- 1 cup shredded carrot
- 1 (6 ounce) packagewild-and-white rice pilaf mix
- 1 cup orange juice
- 1 cup beef broth
- Briefly heat oil in large, deep pot over medium-high heat.
- Add beef and onion.
- Cook, stirring frequently, for 5 minutes.
- Add garlic, mushrooms and carrots.
- Cook another 5 minutes.
- Add pilaf mix, orange juice and beef broth; bring to a boil, then reduce heat and simmer, covered, for 20 minutes or until liquid has been absorbed.
