Special Spuds
- 2 large baking potatoes
- 2 slices sweet onions, approximately 1/4-inch thick
- 4 slices bacon, not thick
- 2 tablespoons butter
- 2 teaspoons seasoning salt & pepper, divided into 1/4 's
- Take 2 pieces of tin foil and lightly spray the tinfoil with buttter flavored cooking spray where the potato will be.
- Sprinkle that area with a little seasoning salt and pepper.
- Split the potato in half.
- Sprinkle both halves with the seasonings.
- Place one slice onion on the potato and top with the 1 tablespoon butter.
- Place other half of potato onion.
- Wrap the bacon around the potato in a criss cross fashion.
- Holding potato tightly together, roll up in tin foil.
- Repeat with other potato.
- Bake approximately 60 minutes or until potatoes are tender and bacon is cooked.
