Apple Barley Soup Recipe
- 2 lrg Onions, thinly sliced
- 2 Tbsp. Vegetable oil
- 3 1/2 c. Vegetable stock
- 1 1/2 c. Apple cider Or possibly- unsweetened apple juice
- 1/3 c. Pearl barley
- 2 lrg Carrots, diced
- 1 tsp Thyme
- 1/4 tsp Dry marjoram
- 1 x Bay leaf
- 2 c. Unpeeled minced apples
- 1/4 c. Fresh parsley, chopped
- 1 Tbsp. Lemon juice
- 1/4 tsp Salt
- In a small soup pot, saute/fry onions in oil over medium heatfor 5 minutes., stirring constantly.
- Reduce heat, cover and cook, stirring frequently for 10 minutes.or possibly till onions are browned.
- Add in stock, cider, barley, carrots, thyme, marjoram and bay leaf.
- Cover and cook for one hour or possibly till barley is tender.Add in apples, parsley and lemon juice.
- Cook for 5 min or possibly till apples are slightly soft.
- Throw away bay leaf and serve.
