Glazed Bacon
- 1/4 c. light brown sugar
- 1 1/2 tsp. Freshly ground black pepper
- 1 1/2 tsp. dried thyme
- 1/2 tsp. dried sage
- 1/2 tsp. salt
- 1/4 tsp. ground allspice
- 1 lb. thick-sliced bacon
- In shallow bowl or pie plate, stir together brown sugar, pepper, thyme, sage, salt and allspice.
- Add bacon and dredge slices on both sides in spice mixture, then rub it in.
- Refrigerate bacon until ready to cook.
- Preheat oven to 400 degrees F. Line jelly-roll pan with aluminum foil.
- Arrange slices in one layer in pan and bake turning 25 minutes, or until bacon is golden brown and sugar mixture has caramelized.
- Serve hot.
