Potato Salad & Mustard Dressing

  1. Place potatoes in a large saucepan and cover with cold water.
  2. Bring to the boil over medium-high heat.
  3. Boil, uncovered, for 20 minutes or until just cooked when tested with a skewer.
  4. Drain.
  5. Allow to cool slightly.
  6. Cut in half and place in a large bowl.
  7. Add beets, dijonnaise and onion to warm potatoes.
  8. Season with salt and pepper.
  9. Toss gently to combine.
  10. Sprinkle with dill.
  11. Serve.
