GREEK TRIAGLE PUFFS (TYROPITAS) Recipe

  1. BEAT TOGETHER 3 CHEESES, EGG AND ONION UNTIL SMOOTH.
  2. ADD COOKED SPINACH.
  3. TAKE 2 SHHETS OF PHILO DOUGH OUT OF PACKAGE, KEEPING REMAINING SHEETS COVERED WITH A DAMP TOWEL TO PREVENT DRYING OUT.
  4. PLACE THE 2 SHEETS ONE ON TOP THE OTHER, CUT SHEETS INTO 3 OR 4 STRIPS LENGTHWISE.
  5. EACH STRIP WILL BE ABOUT 3 INCHES WIDE AND 12 INCHES LONG.
  6. PLACE A TEASPOON FUL OF CHEESE MIXTURE IN ONE CORNER OF A STRIP.
  7. FOLD DOUGH OVER MIXTURE TO RIGHT EDGE, FOLD UP, THEN OVER TO LEFT EDGE, ALL THE WAY UP THE STRIP, MAKING A TRIANGLE.
  8. PLACE ON UNGREASED COOKIE SHEET.
  9. BRUSH ENTIRE TRIANGLE, FRONT AND BACK WITH MELTED BUTTER.
  10. BAKE 400 FOR 20 MIN.
