Cheddar Pepper Pimento Boats

  1. Rinse mini peppers well and slice lengthwise to create the boats.
  2. Remove seeds and place on a baking sheet.
  3. Place in a 400 degrees F oven for 15 minutes or until tender.
  4. Remove and set aside to cool.
  5. Add cheeses, yogurt, pimentos, onions and seasoning to a mixing bowl and stir to combine.
  6. Fill each mini pepper with the filling and sprinkle cilantro.
  7. Serve immediately or chill in the refrigerator, covered.
