German Potato Salad
- 3 cups Roasted Red and White Potatoes, at room temperature or chilled
- 1/4 cup chopped celery
- 2 tablespoons cider vinegar
- 2 teaspoons snipped fresh dillweed
- 1/4 teaspoon caraway seeds
- 2 tablespoons fat-free sour cream
- 1 tablespoon light mayonnaise
- 1/2 to 1 teaspoon hot German mustard
- In a medium bowl, stir together the potatoes, celery, vinegar, dillweed, and caraway seeds.
- In a small bowl, whisk together the sour cream, mayonnaise, and mustard.
- Stir into the potato mixture.
