Bean And Cheese Burritos Recipe
- 8 x flour tortillas 6 inch
- 1 c. minced onion
- 2 Tbsp. water
- 1 can nonfat refried beans (16 oz)
- 1 can green chili pepper (4 oz) liquid removed and diced several dashes bottled warm pepper sauce
- 2 3/4 c. monterey jack cheese lowfat, shredded
- 3 c. lettuce shredded
- 1/2 c. salsa (bottled)
- Wrap tortillas in foil.
- Heat in 300 degree oven about 10 min to soften.
- Meanwhile cook the onion in the water in a medium saucepan till tender.
- Donot drain.
- Stir in the refried beans, diced green chilli peppers, and warm pepper sauce.
- Cook and stir till heated through.
- Spoon about 1/3rd c. ofthe bean mix onto each tortilla just below the center.
- For each burritosprinkle about 3 Tbsp.
- of the cheese atop the bean mix; roll up tortilla.
- Place on a foil-lined baking sheet.
- Bake, Loosely covered, in a 350 degreeoven about 10 min or possibly till heated through.
- To serve, place 3/4 c. of the shredded lettuce on each plate and top with 2 burritos.
- Serve with thesalsa.
- Makes 4 servings.
