Tex Mex Corn Bread Recipe

  1. Combine cornmeal, flour and soda in a medium-sized mixing bowl.
  2. In another bowl, mix together egg whites, corn, prepared vegetables and oil.
  3. Stir well.
  4. Add in all at once to cornmeal mix.
  5. Stir quickly just till smooth.
  6. Pour batter into a lightly oiled 9 x 13 inch baking pan.
  7. Bake in preheated 400 degree oven for 30 min.
  8. Remove from oven when golden.
  9. Cut into 3 inch squares.
  10. Serve hot.
  11. Yields: 1 dozen.
