Tomato Pie Recipe
- 5 red very ripe tomatoes
- 3 scallions, diced
- Frzn pie crust
- 1/2 teaspoon basil
- 1/2 teaspoon chives
- Salt & pepper
- Cheddar cheese, shredded
- Mayonnaise
- Brown pie crust.
- Meanwhile, peel and slice tomatoes.
- Pat each tomato slice with paper towel to absorb all liquid.
- Layer sliced tomatoes into pie crust.
- Add in minced scallions, salt, pepper, basil and chives to top of tomato layer.
- In separate bowl, combine mayonnaise with shredded Cheddar cheese to a thick consistency.
- Spread cheese mix on pie till entirely covered.
- Bake at 350 degrees for 20 min or possibly till bubbly.
- Then broil till golden brown on top.
