Tomato Pie Recipe

  1. Brown pie crust.
  2. Meanwhile, peel and slice tomatoes.
  3. Pat each tomato slice with paper towel to absorb all liquid.
  4. Layer sliced tomatoes into pie crust.
  5. Add in minced scallions, salt, pepper, basil and chives to top of tomato layer.
  6. In separate bowl, combine mayonnaise with shredded Cheddar cheese to a thick consistency.
  7. Spread cheese mix on pie till entirely covered.
  8. Bake at 350 degrees for 20 min or possibly till bubbly.
  9. Then broil till golden brown on top.
