Buffalo Chicken Cups
- 2 whole Boneless, Skinless Chicken Breasts
- 1/2 cups Buffalo Sauce, Depending On Desired Spice Level
- 12 whole Wonton Wrappers
- 1 cup Shredded Cheddar Cheese
- 1 cup Bleu Cheese
- 1 cup Scallions, Chopped

- Cook chicken according to your preferred method (on the stovetop over medium heat for 5 minutes per side; or another method).
- When done, remove chicken from the pan and shred it.
- Put it into a bowl and toss with Buffalo sauce.
- Use enough sauce to achieve your desired heat level.

- Preheat oven to 375 F. Spray a 12-count muffin tin with non-stick spray and put a wonton into each well, forming cups.
- Cook in the oven just for a few minutes, until just lightly browned.
- Remove pan from oven and allow cups to cool.

- Once cooled, fill cups with shredded chicken and cheddar cheese.
- Return to oven for only a few minutes, until cheese melts.

- Sprinkle with bleu cheese and scallions.
