Mississippi Mug Pie

  1. Spray a large microwave-safe mug with nonstick spray.
  2. Add cocoa mix, cake mix, egg substitute, and 2 tablespoons water.
  3. Mix well.
  4. Add chocolate chips and about a third of the pudding to the mug, and stir gently to combine.
  5. Microwave for 1 minute.
  6. Fluff with a fork, and then gently mix in the remaining pudding.
  7. Microwave for 1 more minute.
  8. Let cool slightly.
  9. Top with whipped topping and garnish with mint, if using.
  10. Dig in!
