Green Chile Beef and Refried Bean Layered Nachos
- 5 lbs ground beef, cooked and drained
- 2 yellow onions, diced
- 2 tablespoons minced garlic
- 1 tablespoon paprika
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 6 diced tomatoes
- 1 tablespoon oregano
- 1 (1 lb) packagedehydrated refried beans, prepared according to directions
- 3 cups green onions
- 5 cups shredded cheese
- 4 sliced jalapenos
- 24 corn tortillas, fried and drained
- mix together, beef, onions, jalapenos and brown in skillet, drain excess grease.
- Mix together, beans, seasonings and beef mixture in large bowl, taste and adjust seasonings.
- In a 2 inch full pan, layer, beef and bean mixture, tortillas, cheese, tomatoes, until pan is full ending with beef and beans.
- Bake in oven until hot all the way through.
- Top with additional cheese, and allow cheese to melt.
- Serve, cut into sections like lasagna or other casserole.
- Feel free to garnish with sour cream, guacamole, salsa.
