Chasin Chili (For 10 People)
- 1/2 lb. pinto beans
- 5 cans canned tomatoes
- 4 bell peppers, chopped fine
- 2 1/2 lb. ground beef
- 1 lb. ground pork
- 3 onions, chopped fine
- 2 cloves garlic, minced
- 1/3 c. chili powder
- 2 Tbsp. salt
- 1 1/2 tsp. pepper
- 1 1/2 Tbsp. oil
- 1/2 c. parsley
- 1/2 c. butter
- 1 1/2 tsp. Accent
- 1 1/2 tsp. cumin seed
- Cook beans until tender.
- Add tomatoes and simmer 5 minutes. Saute peppers in oil for 5 minutes.
- Add onions and cook while stirring.
- Add garlic and parsley.
- Melt butter and saute meats for 15 minutes.
- Add meats to onion mixture.
- Stir in chili powder and cook 10 minutes.
- Add to beans and add rest of spices and mix. Simmer, covered, for 1 hour and uncovered for 30 minutes.
- Skim off fat.
- Will feed 10 people.
- Delicious!
