Taramosalata (Fish Roe Salad)

  1. Skin the roe and put in a food processor or blender with the lemon juice.
  2. Squeeze the bread dry, add to the mix and blend well.
  3. Slowly add the olive oil until the mix is the consistency of mayonnaise.
  4. Mix in the onion at the end and add more lemon if wished.
