Shrimp Rice Paper Rolls

  1. Combine first 6 ingredients.
  2. Add 1 rice paper sheet to large bowl of warm water; soak 15 to 20 sec.
  3. or until softened.
  4. Drain on clean tea towel; transfer to work surface.
  5. Spoon 1/4 of the shrimp mixture onto centre of paper.
  6. Carefully fold bottom of paper over filling, then fold in sides and roll up tightly, starting at bottom edge.
  7. Repeat with remaining rice paper sheets and filling.
  8. Cut in half.
  9. Serve with dressing for dipping.
