Chicken Tikka Skewers

  1. Note: You will also need 3 wooden or metal skewers and a skillet or grill pan.
  2. This serves 2-3 depending on how many you want.
  3. We ended up with 6 chunks on each and 3 skewers: I had 1, my boyfriend had 2.
  4. Place the yoghurt, puree, onion, garlic, ginger, paprika and ground cumin in a blender.
  5. Blitz it in the mixer until a smooth paste has formed.
  6. Place the chunks of chicken in a bowl and pour the marinade on top.
  7. Mix until all the chicken is coated.
  8. Place the bowl in the fridge and leave it to marinate for at least 2 hours.
  9. After 2 hours, take the chicken out and thread the chicken as evenly as possible onto the skewers.
  10. We ended up with 6 chunks on each.
  11. Heat up the skillet on a medium temperature, spray with cooking oil (we used the 1 calorie per spray stuff) and heat until it smokes.
  12. Once up to temperature, place the skewers into the skillet.
  13. Cook for 3-5 minutes on each side of the chicken.
  14. Keep rotating the chicken until its cooked through and nicely browned.
  15. Serve immediately.
  16. We served ours with rice.
