Meatball Minestrone Soup

- 1 tablespoon oil
- 1 onion, roughly chopped
- 1 large potato, roughly chopped Safeway 2 pkg For $5.00 thru 02/09
- 1 large carrot, roughly chopped
- 1 large stick celery, chopped
- 500g bacon bones Rite Aid 2 For $7.00 thru 02/06
- 1 litre water
- 425g can tomatoes, chopped Safeway 1 lb For $1.29 thru 02/09
- 1 1/2 tablespoons VEGEMITE
- 1 tablespoon tomato paste
- pepper to taste
- Meatballs
- 300g minced beef Safeway 1 lb For $5.99 thru 02/09
- 1/4 cup KRAFT* Grated Parmesan Cheese
- 1/4 cup fresh breadcrumbs
- 1 egg
- 1 teaspoon dried Italian herbs
- 1/4 cup chopped Italian parsley
- extra KRAFT* Grated Parmesan Cheese, for sprinkling
- Heat the oil in a large saucepan over a medium heat.
- Add the onion, potato, carrot and celery to the pan and cook for 2 minutes.
- Add bones, water, tomatoes, Vegemite* and paste.
- Bring to the boil then cover and simmer for 50 minutes.
- Combine the mince, parmesan, breadcrumbs, egg and herbs in a bowl.
- Form into 18 balls.
- Heat the remaining oil in a frying pan over a medium-high heat.
- Cook meatballs 8-10 minutes or until cooked.
- Add to soup along with fresh parsley and serve topped with extra parmesan.
