Meatball Minestrone Soup

  1. Heat the oil in a large saucepan over a medium heat.
  2. Add the onion, potato, carrot and celery to the pan and cook for 2 minutes.
  3. Add bones, water, tomatoes, Vegemite* and paste.
  4. Bring to the boil then cover and simmer for 50 minutes.
  5. Combine the mince, parmesan, breadcrumbs, egg and herbs in a bowl.
  6. Form into 18 balls.
  7. Heat the remaining oil in a frying pan over a medium-high heat.
  8. Cook meatballs 8-10 minutes or until cooked.
  9. Add to soup along with fresh parsley and serve topped with extra parmesan.
