Orange Kiss-Me Cake
- 1 x orange juice strained
- 1 cup raisins, seedless
- 1/2 cup walnuts chopped
- 2 cups flour, all-purpose sifted
- 113 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup vegetable shortening
- 1 cup milk
- 2 eggs
- 1 teaspoon cinnamon ground
- Grind together the orange peel, raisins and about 13 cup of walnuts, using the coarse blade of a food chopper.
- Sift the flour with 1 cup of sugar, the baking soda and salt into a large mixing bowl.
- Add the shortening and the milk.
- Blend well.
- Add the eggs and blend well again.
- Add the fruit and nut mixture.
- Pour the batter into a buttered and floured baking pan.
- Bake in a preheated 350F (180C) F oven to 40 to 50 minutes, or until the cake springs back when it is lightly touched in the center.
- Drizzle the reserved orange juice over the warm cake.
- Combine the remaining sugar and walnuts and cinnamon; sprinkle the cake with the mixture.
