Beef Or Chicken Filet With Tomatillo Sauce Recipe
- 4 x Filets beef tenderloin or possibly boned and skinned chicken breast halves
- 3 Tbsp. Extra virgin olive oil
- 4 x Corn tortillas
- 4 slc Monterey Jack cheese
- 3 c. Tomatillo Chipolte sauce (see recipe)
- 1/2 c. Cilantro, minced
- Heat oil over high heat in skillet, saute/fry beef or possibly chicken until just done.
- Soften tortills in warm oil, and place on 4 plates.
- Put beef or possibly chicken on top, with cheese slice on top of which.
- Broil briefly until cheese melts.
- Surround meat with about 3/4 c. of sauce, covering the tortilla.
- Sprinkle with cilantro
