Veal Scaloppine Italian Recipe
- 2 pound veal scallops 1/4 inch thick
- 2 tbsp. butter
- 1/4 pound Prosciutto thin sliced
- 1/4 pound Mozzarella cheese thin sliced
- Little pepper
- Juice of 1 whole lemon
- Flatten veal scallops with broad size of a heavy knife till very thin.
- Butter the bottom of a shallow baking dish large sufficient to hold the meat in a single layer.
- Place Procuitto and cheese in layers over meat.
- Sprinkling a little lemon juice over each layer.
- Dot with butter and season to taste with black pepper only.
- Bake uncovered in 350 degree oven for 45 min till tender.
