Herbed Garlic Potatoes

  1. In 4-quart saucepan, heat potatoes, salt, and enough water to cover to boiling.
  2. Cook potatoes just until tender--15 to 20 minutes.
  3. Do not overcook or potatoes will lose their shape.
  4. Drain potatoes in colander and set aside 5 minutes to dry slightly.
  5. Meanwhile, in large skillet, heat olive oil over medium heat.
  6. Coarsely chop 2 cloves garlic and add to oil; cook until garlic browns slightly.
  7. With slotted spoon, remove garlic from oil and discard.
  8. Add potatoes to oil and cook 2 minutes, turning occasionally.
  9. Finely chop remaining garlic clove; add to potatoes and cook, stirring, 1 minute.
  10. Add parsley, thyme, and pepper; cook, stirring, 2 minutes.
  11. Serve warm or at room temperature.
