Coconut Bars
- cooking spray
- 1 (18 1/2 ounce) package white cake mix
- 14 cup butter or 14 cup margarine, softened
- 14 cup coconut
- 14 cup chopped pecans
- 2 eggs
- 1 (14 ounce) can sweetened condensed milk
- 1 egg
- 1 teaspoon vanilla
- 1 13 cups coconut, divided
- 1 cup chopped pecans
- Preheat oven to 350F.
- Spray a 9x13" cake pan with cooking spray.
- In a large bowl, stir together all crust ingredients.
- Spread in the cake pan.
- In a small bowl, beat together the milk, eggs and vanilla.
- Fold in 1 cup of coconut and the pecans.
- Spread evenly over the crust.
- Sprinkle the rest of the coconut over the filling.
- Bake for 30-40 minutes or until golden brown.
