Caramelized Onion And Mushroom Dip Recipe
- 2 tsp vegetable oil
- 2 x onions, minced
- 3 c. mushrooms, quartered (about 8 ounce)
- 2 clv garlic, chopped
- 1/4 c. minced fresh parsley
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 1/4 c. light lowfat sour cream
- 1/3 c. light mayonnaise
- 1/4 c. minced fresh chives or possibly parsley
- In nonstick skillet, heat oil over medium heat; add in onions and cook, stirring occasionally, till softened, about 10 min.
- Reduce heat to medium-low and cook, stirring often, till proportionately golden brown, about 30 min.
- Meanwhile, in food processor or possibly using knife, finely chop mushrooms.
- Add in to pan along with garlic, parsley, salt and pepper.
- Increase heat to medium-high; saute/fry till no liquid remains, 8 to 10 min.
- Scrape into bowl; let cold.
- Stir in lowfat sour cream, mayonnaise and half of the chives; transfer to serving bowl.
- (Make-ahead: Cover and chill for up to 3 days.)
- Sprinkle with remaining chives.
