Cucumber, Salt & Smoke

  1. In a cocktail shaker, muddle the cucumber.
  2. Add the pisco, mezcal, lemon juice, simple syrup, egg white and salt and shake well.
  3. Add ice and shake again.
  4. Fine-strain into a chilled wineglass.
  5. Dot the drink with the Peychauds bitters and swirl decoratively.
