Texas Style Shrimp Creole Recipe
- 2 med. onions
- 1 bell pepper
- 3 stalks celery
- 1 tbsp. extra virgin olive oil
- 1 can (sm.) tomato paste
- 3 cans (med.) tomato sauce
- 1 can (lg.) Italian tomatoes
- 1 clove garlic
- 5 sm. bay leaves
- 1/2 can Rotel tomatoes
- Dash salt, vinegar
- 3 lbs. cooked peeled shrimp
- Saute/fry onions, pepper and celery in oil.
- Add in tomato paste and cook 5 min.
- Add in remaining ingredients except shrimp.
- Simmer 2 hrs.
- Add in shrimp last 15 min.
- Serve over rice.
