Strawberry 66

  1. LINE bottom and sides of 9 1/2" (24cm) flan pan with wafers.
  2. Overlap side wafers slightly to form a petal pattern.
  3. Reserve.
  4. SPRINKLE gelatin over water and lemon juice in a saucepan.
  5. Let stand 5 minutes.
  6. Heat and stir over low heat until gelatin is dissolved.
  7. Stir into strawberry puree and add lemon zest.
  8. Chill until mixture is thickened and mounds slightly.
  9. FOLD in whipped topping.
  10. Pour into crust.
  11. Chill 3 -4 hours or until firm.
  12. Garnish with fresh strawberries, if desired.
