Strawberry 66
- 66 Nilla Vanilla Wafers
- 2 env. unflavoured gelatine
- 1/4 cup water
- 1 lemon, zested and juiced
- 1/4 cup water
- 4 cups ripe strawberries, pureed Safeway 1 lb For $3.99 thru 02/09
- 2 cups Cool Whip Whipped Topping
- LINE bottom and sides of 9 1/2" (24cm) flan pan with wafers.
- Overlap side wafers slightly to form a petal pattern.
- Reserve.
- SPRINKLE gelatin over water and lemon juice in a saucepan.
- Let stand 5 minutes.
- Heat and stir over low heat until gelatin is dissolved.
- Stir into strawberry puree and add lemon zest.
- Chill until mixture is thickened and mounds slightly.
- FOLD in whipped topping.
- Pour into crust.
- Chill 3 -4 hours or until firm.
- Garnish with fresh strawberries, if desired.
