Frankfurter Casserole (Diabetic)
- 1-1/4 cup bean and bacon soup, undiluted
- 1-1/4 cup water
- 2 cups all-meat frankfurters, cut into 1/2-inch slices
- 1 onion, finely chopped
- 1 bunch green onions, finely chopped
- 1/2 cup chopped celery
- 2 tbsp. prepared mustard
- 1 pkg. refridgerated biscuits
- Preheat oven to 375F.
- Mix all ingredients except biscuits.
- Boil gently 5 minutes.
- Put approximately 3/4 cup of the mixture into each of 8 individual baking dishes and top each with biscuit.
- * Bake until golden brown, approximately 20 minutes.
- Serve at once.
- This can also be made in an 1 1/2 quart casserole dish.
